Aunty Jing will teach you how to make your own Peanut Cookies today! just in time for CNY (:
OK.
*clears throat*
first, you will need peanuts, of course.
lots of them.
then, you roast them!
it's ok to watch them as they pop and sizzle a little in the oven.
then, you take them out and grrrrrrrind them.
remember to cool them first! you dont want to scald yourself like how i did (:
do them in batches if you have to, so that the peanuts will be evenly ground.
so what do you do when the blender you were using breaks down on you just as you finish grinding the first batch of peanuts?! yes, fml.
but it's ok!
you search around the house for a bigger blender, and grind the rest of the peanuts (:
smile as you do it, you are not going to let a broken blender spoil your day.
once you have finish grinding those little nuts,
you start measuring the other ingredients and pour them into a hugeeee mixing bowl.
you pour in the flour....
then you pour in the sugar....
say "oops" when you realised you've put in a LITTLE too much sugar and move on.
a little more doesnt hurt.
you pour in the peanuts...
you put in the fingers...
umm, to mix them all around of course. (wash your hands thoroughly before this!)
at this stage, you'll also need to pour in cooking oil. you dont see cooking oil going in here because by then, my hands were full of gunk and trust me, you dont want to scare any prospective guinea pigs off with the image of half mixed cookie dough AND your fingers.
enjoy the process here because kneading dough can be soooooooo therapeutic.
(note to friends and family: no nail polish were harm in this process. they are intact on my nails.)
also, get someone else to take this photo for you because you dont want peanuts on your camera.
after you are done with the dough, you roll them up into little similar bite size balls and flatten them a little before brushing on some eggwash.
pop them into the oven, and watch them grow (:
*dabs tears.
when they shout out to you that they are done,
you take them out.
DO NOT attempt to pop anyone of them into your mouth at this stage.
you have been warned.
and FINALLY,
you lay them out nicely in a tupperware, awaiting the arrival of family and friends to lay their grubby little fingers on them.
uhhh, The Dark Side was a result of being too engrossed in tv.
yields about 90 in the end depending on how huge you roll them, and the number of family members at home the night you are baking. also depends on how many times a particular family member of yours reaches HIS fingers into the box.
so there!
go make some of your own today!
